1 kg beef stew meat, 1 tablespoon olive oil, 1 teaspoon freshly ground black pepper, 1 ½ cup chopped onion, 2 large chopped carrots, 1/2 cup green peas, 1 cup chopped celery, 8 cups beef broth, 1 ¾ cups diced tomatoes, 500 grams diced potato, 1 cup cut green beans, ½ cup chopped green onions, 3 bay leaves, 1 tablespoon salt, and ¼ cup chopped fresh parsley.

Instructions

Start by preheating a soup pot with some oil over medium-high heat. Place the beef in the pot. Make sure it is in a single layer, and cook until nicely browned on all sides. If necessary, brown the beef in batches. 

Once the beef is browned, add onions to the pot and continue cooking for about 3 minutes, until the onions are softened and have a light golden color. Then pour in beef broth, tomatoes, bay leaves, salt, and pepper, and bring the mixture to a boil. Reduce the heat to a simmer, partially cover the pot, and let it cook until the beef becomes tender. It should take around 55 to 75 minutes.

Next, add potatoes, carrots, and celery to the pot and cook for approximately 20 minutes until they become tender. After that, incorporate the green beans and green onion and simmer for an additional 10 minutes. Finally, stir in fresh parsley and season the soup with salt and pepper according to your taste preferences. Remove the pot from the heat and enjoy a bowl of hearty and flavorful beef soup.

Tender Beef Stew

Ingredients

1 kg cubed stewing beef, 6 cups beef broth, 3 tablespoons flour, 500 gram peeled and cubed potato, ½ teaspoon black pepper, ½ teaspoon garlic powder, ½ teaspoon salt, 3 tablespoons olive oil, 1 chopped onion, 4 carrots cut into 1 inch pieces, 3 tablespoons tomato paste, 1 teaspoon dried rosemary, 2 tablespoons cornstarch, 2 tablespoons water, and ¾ cup peas. 

Instructions

To create a delicious beef stew, begin by combining flour, garlic powder, salt, and pepper. Toss the beef in this flour mixture. Meanwhile, heat olive oil in a large pot, then cook the beef and onions until they are nicely browned. 

Now add beef broth to the pot and make sure to scrape up any brown bits from the bottom. Stir in all the remaining ingredients, except for peas, cornstarch, and water. At this stage, reduce the heat to medium-low, cover the pot, and let the stew simmer for about 1 to 1 ½ hours, or until the beef is tender. If needed, adjust the consistency of the stew by creating a slurry. For this, use equal parts cornstarch and water, and slowly add it to the boiling stew until you get your desired thickness.

Finally, stir in the peas and let the stew simmer for an additional 5 to 10 minutes before serving. Complete it by seasoning with salt and pepper to taste. This comforting beef stew is sure to warm your soul.

Beef and Vegetable Stir-Fry

Ingredients

1 pound beef sirloin (cut into 2 inch strips), 2 tablespoons vegetable oil,1 ½ cups fresh broccoli florets, 1 red bell pepper (sliced), 2 carrots (thinly sliced), 1 green onion (chopped), 1 teaspoon minced garlic, 2 tablespoons soy sauce, and 2 tablespoons roasted sesame seeds.

Instructions

First, gather all the required ingredients and keep them nearby. Now, heat vegetable oil in a large skillet or round-bottomed pan over medium-high heat and cook and stir the beef until it turns brown. It should take about 3 to 4 minutes. 

Next, push the beef to the side of the wok and add broccoli, bell peppers, carrots, green onions, and garlic in the centre. In the same way, cook the vegetables for around 2 minutes. Then, mix the beef with the vegetables and season everything with soy sauce and sesame seeds. Continue cooking and stirring until the vegetables reach a tender consistency. It typically takes about two minutes. Now, serve the stir-fry hot.

Beef and Quinoa Salad

Ingredients

1 cup quinoa, 400g rump steak (fat trimmed), 2 tablespoons extra virgin olive oil,1 avocado (finely chop flesh), 1 cucumber (sliced), 4 radish (sliced), 420 gram tin corn kernels, 120g rocket, 2 tablespoons lime juice, and 1 tablespoon dijon mustard.

Instructions

To prepare the quinoa, place it in a medium saucepan with 2 cups of water. Bring it to a boil over high heat. Then reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes. Afterward, remove from the heat and fluff it with a fork.

Meanwhile, heat up the frying pan over medium-high heat. Once hot enough, drizzle some oil over the steak and place it on the pan. Cook for approximately 3 minutes on each side for a medium-rare steak, or adjust the cooking time according to your preference. After cooking, transfer the steak to a plate, cover it, and let it rest for 5 minutes. After the resting period, thinly slice the steak.

In the meantime, prepare the salad vegetables. For the dressing, mix lime juice, olive oil, and dijon mustard together in a small bowl or jug.

Finally, in a large salad bowl, combine the quinoa, and other vegetables. Arrange the beef on top of the quinoa. And, drizzle the dressing over the salad to add flavor.

Beef Cutlets

Ingredients

500 gram medium sized cubic beef, 1 tablespoon meat masala, 2 tablespoon black pepper powder, ¼ teaspoon turmeric, 1 large finely chopped onion, 3 green chilies (sliced round), 3 minced garlic, ½ inch sized minced ginger, 2 sprigs of curry leaves (roughly chopped), 2 medium sized potato,1 cup breadcrumbs, 2 whole eggs , oil (for deep-frying), water (as required), and salt (as required).

Instructions

Start by cooking the beef with salt, turmeric powder, pepper powder, and some water. Once done, drain the excess water and let it cool. Next, shred the cooked beef using a fork or a food processor. In a separate pot, cook the potatoes with a little water and salt. Then drain and mash the potatoes and set them aside. 

To prepare the filling, heat oil in a pan and sauté chopped onions with a pinch of salt until they turn golden brown. After that add chopped ginger, garlic, green chilies, and curry leaves. After adding chopped spices, sprinkle meat masala and pepper powder, and sauté for a few more minutes until well blended. At this stage, add the mashed potatoes and cooked beef to the mixture. Mix everything well, and let it rest.

In a small bowl, beat the eggs, and in another bowl, take the breadcrumbs. Then shape the meat filling into palm-sized patties while heating oil in a frying pan. When the oil is warm enough, dip each patty in the beaten eggs, coat them with breadcrumbs, and fry them until golden brown. 

Once the patties are fried, place them on a paper towel to remove excess oil, and serve the hot beef cutlets with tomato ketchup.
